5 Recipes for healthy breakfast
Breakfast is the most important meal of the day. As a kid my mom used to say this every time I wasn’t up for a boring breakfast. Yes, the first meal of the day could quickly become very boring. There is a set pattern that every family follows. Some prefer egg, bread and bacon and some prefer cereal while others eat pancakes. Even as a child I felt that my mom should have been a little more creative with the breakfast menu. But I could understand that she was a working mother so she was always short of time. So, I started to look out for healthy living recipes to make our breakfast interesting.
My grandmother had a huge kitchen and every time we visited her for the holidays I got to learn cooking or baking something new. Well, that’s how I have my own cookie shop today. All my grandmother’s recipes with a little twist of my own! Now that I have given you a trade secret let me share five healthy breakfast recipes with you.
Spinach and leek omelet
Who doesn’t like a tasty and filling omelet for breakfast? Omelets are fast and easy to cook. And they are a very healthy choice especially if I leave out the York and use only the egg white. At first I cook finely chopped leek and spinach in butter for about 15 minutes. Then I whisk the egg white with seasoning and pour half of it in a frying pan. On top of it the cooked leek and spinach is added and the remaining egg mix. Once its ready I serve it with small amount of cheese grated on top.
Egg and cheese taco
A taco is again one of the healthy living recipes for breakfast. It is a better choice than a burrito because it is smaller in size which helps me to maintain the right portion for breakfast. Generally I use corn tortillas and add cheddar cheese with tomato salsa. Microwave the cheese till it melts and add scrambled egg in the roll. That’s how I have a tasty breakfast ready in minutes.
For this porridge I add oats to boiling milk along with brown sugar and a pinch of salt. When the porridge is thick enough I remove it from heat and let it set for about five minutes. Then I slice up some bananas to put them on top of the set porridge and garnish it with cinnamon.
Salmon and egg sandwich
Everyone loves a sandwich. To make it a little different from the regular chicken, bacon or ham sandwich I use smoked salmon and egg white scrambles.
Breakfast in a glass
At times when I am late for my cookie shop I blend pineapple juice, chopped bananas, strawberry yoghurt and wheat cereal biscuit. That’s my power breakfast in a glass. You could try a different combination of your own.
